Seafood risotto-wheat as rice alternative!

Bu sefer denizmahsullü risottonuzu bulgur ile deneyin!

 
 
Cooking wheat risotto is more or less the same process as in my earlier risotto recipe,here!
Broil a few cloves of garlic in oliveoil,just to give their flavor to the oil,then discard!
Add onions,cut into small bits... (oops,teardrops again!) then into the oliveoil,
sauté for a few minutes,then add the wheat
 (I use the coarse grains)...
stir for a minute,then add tomatoes,peeled and minced... 
 and now we start the cooking process,
adding, bit by bit, your hot fish broth and stiring all the while till it evaporates...
then a bit more...
 all the cooking takes about 15-17 minutes if using coarse grains,
13 minutes if using normal cracked wheat...
do not forget the seasoning!...
 I added mussels,shrimps and preboiled sweetpeas into the mixture
 in the middle of the cooking process...
turn off the heat,add a bit of butter,
and into your plates with some chopped parsley!
 

Sistem aynı buradaki risotto tarifimde anlattığım gibi!
Zeytinyağda, kırılmış bir-iki diş sarımsağı kızartıp atıyoruz
 (sırf aromasının yağa geçmesi için)
 Sonra ince kıyılmış soğanı çeviriyoruz (tüh,yine gözyaşı)
 sonra iri bulgur...
 bir dakika çevirip,rende domates ekliyoruz
ve bu sefer kaynatılmış sıcak balık suyu ile çektire çektire pişirme işlemine başlıyoruz..
 bulgur daha çabuk piştiği için yaklaşık süre: iri bulgura 15-17 dak.,normal bulgura 13 dak.
tuz, biber unutmayalım
Ben yarısında, yani sekizinci dakika civarı, içmidye ve karidesler ile
 haşlanmış bezelyeyi (şart diil!) ekledim.
Baştan koyarsanız karidesler çok pişer ve cansız bir tada ulaşır,hatta sertleşir...
 midye zaten çok çabuk pişer...
Altını kapatınca yine tereyağı katıyorum
ve tabaklara ... kıyılmış maydanoz yakışırrrr!

 
 
And for those who don’t like seafood... with a twist of lemon rind!

a refreshing soup

and that is our "gazpacho" version ,)
a cooling soup on a hot summer day...

bu da bizim "gazpacho"muz ,)
sıcak günlerin soğuk çorbası...



no big deal:

mix pre-boiled wheat ,pre-boiled chickpeas and a cucumber chopped into tiny cubes,
with creamy yogurt,add condiments :
a bit of salt,fresh aromatic herbs;dill,mint,tarragon,
liquidize to your taste of consistency with water,
and finish with drizzlings of a good quality virgin olive oil!
(oops,not to forget to sort out the outer shell of chickpeas!)

basit:

önceden haşlanmış buğday,ve nohutları,bir ufak doğranmış salatalık ile birlikte
yoğurdumuzla karıştırıyoruz,
biraz tuz,taze otlarla - dereotu,nane ve tarhun yakışır- tatlandırıyoruz,
su ekleyerek istenilen koyuluk kıvamını ayarlayıp
sızma zeytinyağı ile sunuyoruz!
(nohutların dış zarlarını temizlemeyi unutmayalım!)
