Here is another pizza crust recipe that we discovered and tried out a couple of times lately
and I can tell you that it can easily compete with my earlier thin crust no-knead pizza !
you will find the dough, much easier to handle while rolling out ...
however this time you need to knead the dough a few times!
 

 
 
İşte bir ince hamur pizza tarifi daha!
Denendi ve daha önce yaptıklarımız kadar başarılı oldu...
diğerine göre aralıklarla yoğurma işlemi eksisi,
hamurun rahat ele gelip,oklava ile ince açılması ise artısı!
 
 
 
 
 

180 gm whole wheat flour
20 gm finely ground semolina flour
1 teaspoon fine sea salt
½ teaspoon dried yeast
½ spoon extra virgin olive oil
130 ml lukewarm water 

(makes 3 pizzas) 

Sieve the flour/s and salt on to a clean work surface and make a well in the middle.
In a jug, mix the yeast,and olive oil into the water and leave for 3-4 minutes,
 then pour into the well.
Using a fork, bring the flour in gradually from the sides and swirl it into the liquid.
Keep mixing,and when it all starts to come together,
 work the rest of the flour in with your hands.
Knead until you have a smooth, springy dough.
Place the ball of dough in a large flour-dusted bowl,
sprinkle some flour on top,
cover with cloth and place in a warm room for about an hour
until the dough has doubled in size.
Now remove the dough to a flour-dusted surface
 and knead it to push the air out for 4 minutes
leave to rest for another half an hour...
knead for another 4 minutes...
rest for half an hour...
knead and divide the dough up into 3 balls ...
leave to rest for 20 minutes and roll them out ...
and follow the same steps and tips of my earlier recipe!
  

 
 

180 gm tam buğday unu
20 gm ince irmik unu
1 çaykaşık deniz tuzu
½ çaykaşık kuru maya
½ kaşık sızma zeytinyağı
130 ml ılık su 

(üç kişilik) 

Un,irmikunu ve tuzu eleyerek tezgaha hazırlayın.
Ortasını açıp,
bir bardakta karıştırıp 3-4 dakika beklettiğiniz maya,zeytinyağı ve ılık suyu karışımını boşaltın
önce bir çatal ile unu ortaya örterek karıştırın,
sonrasında kulak memesi kıvamında bir hamur elde etmek için
elle karıştırın!
pürüzsüz bir hamur elde edene dek yoğurun.
Hafif unlanmış bir kaba alıp,üstüne de hafif un serpip,mutfak bezinizle kapatıp,
bir-bir buçuk saat kabarana dek bekletin!
Hamuru söndürerek 4 dakika kadar yoğurun ve
tekrar yarım saat kadar beklemeye alın...
bi  4 dakika daha yoğurun ve yine yarım saat bekletin...
yoğurup,hamuru 3 parçaya bölün...
20 dakika beklettikten sonra oklava ile açıp,
önceki tarifimdeki adımları ve ipuçlarını da dikkate alarak
pizzalarınızı pişirebilirsiniz...

my thin crust pizza


 
 
 


Zanzibar and Story Deli are our favorite diners for our choice of pizza,
with the super thin crackery base and flavorful toppings…
even with the classic Margherita or simple Bianca,they taste awfully delicious…

To finalize our frequent cravings for them,
Ahmet finally succeeded in baking us this homemade version
after his zillion researches for the right recipe and his infinite trials…
 and here is how:
 
 
 

Türkiye’de Zanzibar ’ın,Londra’da Story Deli ’nin pizzaları
bizi artık çıldırtma aşamasına getirdi…
çıtır çıtır incecik hamuru ,en basit Margarita ya da Bianca çeşidini bile leziz kılmaya yetiyor…

Bu aklımızdan çıkaramadığımız ve gözümüzün önünden gitmeyen pizzaları
 evde de yapmak Ahmet Bey için şart oldu,
ve derin araştırmalar ve sonsuz denemeler sonucu başardık…
 işte şöyle:
 
 
 
 
 
The original recipe is of Jim Lahey ’s !
It is a long-rise dough ,prepared with no-knead technique!
You just mix the ingredients to make your dough the night before your pizza day
 and leave to rest for the long fermentation period,
which results in a crisp,crackly crust and large airy crumb...yum yum yum
 
 
 

Tarif Jim Lahey ’den…
 hamurun özelliği ; yoğurmaya gerek yok ve uzun bir mayalanma sürecine tabi tutulması…
Hamuru oluşturan malzemeyi pizza partinizden bir gece evvel karıştırıp,bırakın…
 ertesi gün size sadece fırınlamak kalıyor !!
 (bu uzun mayalanma süreci hamuru çıtır ve kabarcıklı hale getiriyor)

 
 
 
 
 

500 grams (17 ½ ounces or about 3 ¾ cups) all-purpose flour
1 gram (1/4 teaspoon) active dry yeast
16 grams (2 teaspoons) fine sea salt
350 grams (1 ½ cups) water 
 

In a medium bowl,blend the flour, yeast, and salt.
Add the water and, with a wooden spoon or your hands, mix thoroughly.
Cover the bowl with plastic wrap and allow it to rise at room temperature for 18 hours (it will double in size)
Transfer dough to a floured work surface.
Gently shape into a rough rectangle. Divide into 4 equal portions.
 Working with 1 portion at a time, gather 4 corners to center to create 4 folds.
 Shape each portion into a ball and turn seam side down.
 Dust dough with flour (they should not be sticky);
 set aside on work surface and do the same for all 4 portions…
 Let dough rest, covered with plastic wrap or a damp kitchen towel, until soft and pliable,
about 1-2 hours. 
 

During the last hour of dough’s resting, prepare oven:
arrange a rack in middle of oven or your pizza stone,and preheat to its hottest setting…
Gently shape your doughs into rounds.
Top with desired toppings and
bake until bottom of crust is crisp and top is blistered, about 10-12 minutes.
you can leave unused dough in the refigerator for up to three days,even one week…


 
 
tips to follow :
 

*we always preferred to roll out the dough into rounds by hand.
The dough is very delicate and soft to handle so it is easier to spread out by hand!
*our rounds were 30 cms in diameter
*do not spread out your tomato paste and mozzarella cheese to the borders
*bake your pizzas with your basic ingredients for the first 8 minutes and then put your
remaining toppings for the last few minutes of baking…
*we used a pizza shovel to slide the rolled out pizzas onto the pizza stone in the oven
*do not exaggerate with topping ingredient to get the best result
*and if you do not have a pizza stone,
you may use the lower side of your baking sheets as one,
however it needs to be well-heated!
 
 
 
500 gm ya da 3 ¾ cup un

Geniş bir kapta un,tuz ve mayayı birbirine karıştırdıktan sonra,

suyu katıp elle ya da tahta kaşıkla karıştırarak,yapışkan hamur haline gelene dek karıştırıyoruz.

Kabın üzerini strech film ile kapatılıp,en az 18 saat oda sıcaklığında (21-22 derece) bekletiyoruz.

Mayalanma süresi dolunca, bol unlu tezgaha hamuru alıp, üzerini hafifçe unluyoruz

 ve dört parçaya ayırıp her bir parçayı, bohça gibi 4 e katlayarak

 ( katlanmış kısım alta gelecek şekilde) üstlerini bez ile kapatarak 2 saat dinlendiriyoruz

(hamurları unlayın,beze yapışmasın!)

Bekleme süresi sonunda hamurunuz çok yumuşak ama lastik gibi kolay işlenebilen,

ancak yırtılmayan bir hamur olacak…

elle veya oklava ile açabilirsiniz…

 

 

Bu arada fırın en yüksek ısıda ısıtılması lazım.

Pizza taşınızı ya da fırın tepsinizin tersini

 1.5 saat evvel ısıttığımız takdirde istediğimiz sonucu alabiliyoruz.

Açtığınız hamurları istediğiniz malzemeler ile fırına atın…

Şimdiden afiyet olsun..

Kullanmadığınız hamuru buzdolabında bir haftaya dek saklayabilirsiniz …

 (ancak öyle lezzetli olacak ki ,kalan hamur diye birşey yok!!)
 

 
İşinizi kolaylaştıracak ipuçları :  
 

*hamur çok yumuşak ve yırtılabilir olacağından,biz elle yayarak açma usulünü benimsedik!
*pizzaları yaklaşık 30 cm çapında açtık…
*domates sosunuzu,ya da mozzarella peynirinizi,ya da diğer malzemeleri
 dış kenarlara dek yaymayın ki kenarlar şişip kabarsın!
*olağan malzemelerinizle ilk 8 dakikayı pişirin,
çabuk pişecek prosciutto,parmesan vs gibi malzemelerinizi son 4 dakika içinde koyun…
*açtığınız pizzaları fırın taşına kaydırmak için biz pizza küreği kullandık (Tahtakale’den!)
*malzemeleri abartmadan koyarsanız,hamuru çok ıslatmamış olursunuz!
*pizza taşınız yoksa,fırın tepsilerinizin arka yüzlerini bu amaçla kullanabilirsiniz,
ancak unutmayın,çok kızgın olmalılar

 
 


We used this milky mozzarella from Peysan,the freshest I’ve ever seen in our shelves!?!

 


And you’ll definitely want to try this topping for your pizza Bianca:

 

2 tablespoons unsalted butter
1 medium onion, diced
2 cloves of garlic, sliced
1 cup dry white wine
1 1/2 cups heavy cream
Kosher salt and freshly ground black pepper 

 

Melt butter in a large saucepan over medium high heat.
 Add onions and garlic, season with salt and pepper,
 and cook, stirring frequently, until just starting to brown.
 Add white wine, bring to a simmer, and cook until liquid is nearly completely reduced.
Add cream, bring to a simmer, and cook, stirring frequently,
 until reduced by 1/3rd, about 10 minutes.
Blend ingredients using your blender.
Season to taste with more salt and pepper.

2 kaşık tereyağı tavada eritip,bir ince kıyılmış soğan ile 2 diş sarımsağı,dövüp içine atın...
az tuz ve biber ile tatlandırıp,karıştırarak orta ateşte iyice çevirin...
3/4 bardak beyaz şarap ekleyip,çektirin...
1 kutu krema (önceden çırpılıp,yoğunlaştırılmış olsun)ekleyerek ve karıştırarak kısık ateşte 10 dakika pişirin...
karışımı blenderdan geçirip,taze biberiye ilavesiyle pizzanızın üstüne kullanabilirsiniz...
taze biber,taze roka,sızma zeytinyağı,ince traşlanmış parmezan eklemeleri size kalmış artık!
offf offf...
