smoked








we don’t leave our stovetop smoker abandoned on our kitchen shelve...







time to prepare our “smoky salmon”
 
 



 
we marinate our salmon fillet in this basic brine,
covered and left in refrigerator for 24 hours
 (the longer you keep it submerged in the brine, the saltier it will get)
4 cups water
1/4 cup kosher salt
1/4 cup brown sugar
2 bay leaves
1 stalk sliced celery
1/2 cup chopped fennel
1/2 chopped onion
2 smashed garlic cloves
then we dried our brined fish on a rack, in a cool, breezy place for 2-3 hours...
this step is essential before smoking the fish.
A thin, lacquer-like layer on top of the fish forms in this process,
 that seals it and offers a sticky surface for the smoke to adhere to.
Aaaaaaand we were ready to smoke our salmon:
We used apple wood
 (you may try anyother fruit or nut wood,or hickory,oak)
 and smoked at around 98 C for 20 minutes...

Somonu bir gün evvel şu karışımda marine ettik…
Buzdolabında en az 24 saat...
(daha uzun süreli marinasyon,daha tuzlu bir tat oluşturur)
4 cup su
1/4 cup kalın tuz
1/4 cup kahverengi şeker
2 adet defne yaprağı
1 kereviz sapı, dilimlenmiş
1/2 rezene,doğranmış
1/2 soğan,doğranmış
2 diş sarımsak,ezilmiş
      marine işleminden sonra,
filetomuzu solusyondan çıkarıp havlu kağıt ile kuruladık
 ve ızgara üstünde havadar,serin bir yerde 2-3 saat beklettik
bu,mutlaka atlanmaması gereken bir işlem,
zira bu esnada balığın üstünde kuruma sonucu ince bir tabaka oluşuyor ki,
bu tabaka isleme sırasında,isin balığa daha etkin işlemesine yol açıyor...
veeee artık tütsülenmeye hazır:
biz elma ağacı talaşı kullandık ancak herhangi bir meyve ya da yemiş ağacı talaşı,
ceviz ya da meşe talaşı kullanılabilir...
98 C de 20 dakika pişirdik...
