brunching in "Bulgarian" style ...







when I came across this esthetic version of brioche bread,
I immediately thought it should take a seating
 in my bakery selection of the summer brunch buffet...

Brioche Bulgare / Bugarski kruhici

200 ml warm milk
1 tablespoon butter,softened
1 egg + 1 egg white (use the yolk for eggwash)
1 tablespoon sugar
2 teaspoons dry yeast
2 teaspoons salt
500 gm all-purpose flour
mix the sugar and yeast into warm milk and let rest for 10 minutes till frothy...
place the egg and eggwhite in the middle of the flour
add the butter and the milk mix aswell...
start working to form a soft brioche dough...
knead for 5-8 minutes and leave to rest for an hour till double in size
divide the dough into 4 pieces/balls and divide each into 4 pieces again!
while working with one piece,leave the other pieces covered with a kitchen towel
roll each of the four pieces into circles (25 cm)
and layer all four,brushing with butter in between
roll into a log tightly and cut in diagonals...
place them in your cake tin ,lined with parchment paper and let rise for 45 minutes
brush with eggwash and bake in preheated oven,at 200 C  for 15-20 minutes ...

cinnamon rolls







sticky rolls to start your day , the most delicious way…

130 gms flour
3 gms instant yeast
1/2 tablespoon sugar
1/2 teaspoon salt
1 egg
1.5 tablespoons  milk
60 gms butter, cut into cubes

this dough for the brioche needs to be made a night ahead
start by adding the flour, the yeast, the sugar, the salt, the egg, the milk,
and mix all the ingredients for few minutes
add the butter a few pieces at a time,incorporating each addition before adding the next
should come to a fairly wet,soft and sticky dough,
which will turn out to be a supremely soft bun tomorrow when baked!  
knead the dough for 7-8 minutes and shape it into a ball,
place in a bowl lightly dusted with flour and let it rise for about an hour or until it has doubled its size
stretch and knead the dough ,letting all air bubbles out and shape into ball,
cover with stretch film and refrigerate overnight

1 egg yolk
1/4 teaspoon vanilla paste
1 tablespoon  sugar
1 tablespoon  flour
1/4 cup milk
orange zest
1/4 tablespoon butter

the above ingredients are for your pastry cream that will fill your rolls tomorrow!
place the yolk in your saucepan, add vanilla paste and mix with your hand mixer for 30 seconds
pour in the sugar and whisk for few minutes till pale yellow and thick
add flour and mix for 30 seconds, till incorporated
add the milk and mix again
now place on low-medium heat,whisking all the time,till it starts to thicken
stir in the orange zest,and let cool slightly, stirring occasionally
stir in the butter,
cover with stretchfilm, pressing it against the surface,to prevent the skin from forming
and refrigerate


40 gms brown sugar
30 gms butter
1/2 tablespoon  honey
1 teaspoon Grand Marnier
1/2 teaspoon vanilla paste

and now for another filling|coating mix,
whip the butter into creamy texture with your hand mixer at low speed,
add the sugar and mix for 3-4 minutes, until fluffy
add liquor, honey and vanilla paste and continue to mix for another minute
we will use 3/4 of this mix for filling,
and the rest for coating your buns…
(keep the bit for the coating in a warm place,to have a liquidy state)



 



next morning:


place your dough on a lightly floured surface,
punch the air out,
and roll out the dough into a 30 cm square
spread the pastry cream over the dough,
then spread the reserved honey filling on top of the pastry cream
dust with cinnamon and sprinkle with chopped walnuts
roll the dough into a log,as tightly as possible,
 then turn the seam side down and cut it into slices of about 3 cm in thickness
arrange them in your pan
(I used a heavy bottomed skillet that can go into my oven)
and slightly press in the centre of each piece
cover with kitchen towel and let it rest to proof for an hour
preheat the oven to 180 C
bake the buns for 40 minutes
when the buns are done, the tops should be golden brown
 and a skewer poked through should come out clean
once out of the oven,remove them onto your serving plate
and spoon with the rest of your honey mix ,reserved and kept warm for coating purpose…

enjoy warm!


 



biraz yapış yapış ama güne başlamanın en leziz yolu...

130 gm un
3 gm kuru maya
1/2 kaşık şeker
1/2 çaykaşık tuz
1 yumurta
1.5 kaşık süt
60 gm tereyağ,küp küp kesik halde

 hamuru bir gece önce yapmanız lazım!
un,maya,şeker,tuz,yumurta ve sütü bir kapta karıştırın
biraz birbirine yedirdikten sonra tereyağı azar azar ekleyip,
her ekleyişte yoğurun
oldukça nemli,yumuşak ve yapışkan bir hamur olacak,
ki bu hamur yarın pişirdiğinizde yumuşacık çöreklerinizi oluşturacak
7-8 dakika yoğurduktan sonra top şekline getirip,
hafif un serpili bir kapta bir saat kadar kabarmaya bırakın
tekrar yoğurarak,havasını söndürüp,top halinde kabınıza yerleştirin,
üstünü stretch film ile kapatıp,buzdolabında ertesi sabaha dek bekletin

1 yumurta sarısı
1/4 çaykaşık vanilya ekstresi
1 kaşık şeker
1 kaşık un
1/4 cup süt
portakal kabuğu rendesi
1/4 kaşık tereyağ

yukardaki malzemeler yarın çöreklerinizin içini oluşturacak pasta kreması için!
sos kabınızda yumurta sarısını,vanilya ekstresi ile çırpın
şekeri ekleyip,birkaç dakika pürüzsüz ve koyu bir kıvam alana dek çırpın
unu ekleyin ve çırpmaya devam edin
sütü ilave edin ve karıştırın
kısık-orta ateş üstüne alıp, koyulaşıncaya dek,çırpmaya devam edin
ateşten alın
portakal kabuğu rendesini ekleyin ve yavaş yavaş karıştırarak soğumaya bırakın
tereyağı ekleyin,karıştırın
üstünü strechfilm ile bastırarak kaplayın (kaymak tutmasını önler)
ve buzdolabında muhafaza edin


40 gm kahverengi şeker
30 gm tereyağ
1/2 kaşık bal
1 çaykaşık Grand Marnier
1/2 çaykaşık vanilya ekstresi

şimdi bir diğer iç dolgu | kaplama karışımı oluşturmak zamanı…
tereyağı krema kıvamına gelmesi için el mikserinde çırpalım
şekeri ekleyip,3-4 dakika daha çırpmaya devam…
likör,bal ve vanilya ekleyip,karıştırmaya devam
bu karışımın 3/4 ünü dolgu için,
kalanını çöreklerin üstünü kaplamak için kullanacağız
(kaplamaya ayırdığınız miktarı,ılık bir mekanda akışkan halde muhafaza edin)






ertesi sabah:



hamuru hafifçe unlanmış bir tezgaha alın,
içindeki havayı söndürün
yaklaşık 30 cm ebatında bir kare halinde açın
pasta kremasını üstüne yayın
daha sonra üstüne ballı karışımı yayın,
üstüne arzu ettiğiniz miktarda tarçın eleyip,
kırık cevizlerle kaplayın
sıkı biçimde bir kenarından yuvarlamaya başlayarak silindir şekline sokun
ek kısmı alta gelicek şekilde konumlayıp,3 cm kalınlığında diskler halinde kesin
pişirme kabınıza yerleştirin
 (ben,fırına girebilecek dökme tava kullandım)
üstlerinden hafifçe bastırın
mutfak örtünüzle örtüp,bir saat kabarması için bekletin
180 C önceden ısıtılmış fırında,40 dakika pişirin
üstleri kızarmış,ve içine batırılan kürdanınız kuru ise pişmişlerdir
fırından çıkar,çıkmaz
ayırdığınız ballı karışımla üstlerini ıslatın…
ılık ılık servise!

chocolate cuties...






how about
chocolate filled brioches with tiramisu cream
to liven up your breakfast tray this morning?





130 gms  all purpose flour
pinch of salt
1 tablespoon sugar
1 teaspoon yeast
1 egg, beaten
1,5 tablespoons milk
55 gms butter
50 gms dark chocolate
eggwash (egg+water beaten together)
I start preparing my brioche a night ahead:
mix the flour,salt and the instant yeast
add sugar,beaten egg and milk and mix well
add the butter a few pieces at a time,mixing well after each addition
continue kneading for 10 minutes, till the dough is elastic
shape into a ball and leave to double in size for an hour
knead to get the air out , cover well with cling film and refrigerate overnight
next morning, roll a small piece of dough between the palm of your hands, press a small piece of chocolate in, cover on all sides and place in prepared mini muffin cups,buttered ahead
makes about 10 mini brioches
cover with a tea towel and leave to proof for 1 hour
preheat the oven to 200C
brush the brioches with eggwash
and bake for about 15 minutes
and serve with this tiramisu cream:
250 gms mascarpone cheese
a small cup of strong espresso coffee
2 tablespoons marsala wine (or a liqueur of your choice!)
2 tablespoons brown sugar
all ,beaten with electric mixer until soft and fluffy,
refrigerate for use

kahve sosu eşliğinde çikolatalı kahvaltı çöreklerine

1 yumurta,çırpılmış

üstlerine sürmek için su ile çırpılmış bir yumurta
hazırlığımı kahvaltı sabahı öncesi ,akşamdan başlıyorum:
un ,tuz ve mayayı havalandırarak karıştırın
şeker,yumurta ve sütü ekleyerek unlu karışıma yedirin
tereyağı partiler halinde ekleyin ve her ekleme sonrası yoğurun
10 dakika kadar yoğurmaya devam edin
elastik bir hamur olacak
top haline getirip,bir saat kadar şişmesi için bırakın
tekrar yoğurarak,içindeki havayı söndürün
stretch film ile üstünü örterek,gece buzdolabında bekletin
sabah hamurdan küçük toplar kopararak,avucunuzda yuvarlayın
herbirinin ortasına birer çikolata parçası oturtarak,kenarlarından kapatın ve
minik toplar halinde,önceden yağlayarak hazırladığınız ufak muffin kaplarınıza yerleştirin
yaklaşık 10 çörek yapabilirsiniz
üstlerini mutfak bezinizle örtüp,1 saat kadar kabarması için bekletin
süre sonunda sulandırılmış yumurta ile üstlerini fırçalayın
önceden 200 C ısıtılmış fırında 15 dakika pişirin
ve mutlaka şu tiramisu kreması ile servis edin:
250 gm mascarpone peyniri
1 fincan sert hazırlanmış espresso kahve
2 kaşık marsala (ya da seçtiğiniz bir likör!)
2 kaşık kahverengi şeker
hepsini mixer ile çırpın ve kullanana dek buzdolabında bekletin

brioche...





yesterday I tried this brioche recipe and
this morning they were ready for our very "French" breakfast!!



dün şu brioche tarifi ile hamuru hazırladım ve
bu sabah çok "Fransız" bir kahvaltı yaptık!!




mix 1 pack of dry yeast (8 gms) with 40 ml of lukewarm milk,
and leave aside for 5 minutes...
mix 40 gms of sugar,330 gms of flour,1/2 teaspoon of salt in a bowl...
make a well in the center and add the milk+yeast mixture...
start mixing with your hands adding 3 eggs + 1 yolk ,one at a time...
knead for 5 minutes,
then start adding 150 gms of butter,cut into cubes
and mix the dough for another 10-12 minutes...



bir paket kuru mayayı (8 gm) , 40 ml ılık süt ile karıştırıp,
5 dakika dinlendiriyoruz...
40 gm şekeri,330 gm un ve yarım çaykaşığı tuz ile karıştırıp,
ortasını açarak mayalı karışımı ekliyoruz...
elle karıştırmaya başlayıp,3 yumurta ve 1 yumurta sarısını teker teker ilave ediyoruz...
5 dakika elle yavaş yavaş karıştırıp sonrasında içine
150 gm tereyağı küp küp keserek ilave ederek 10-12 dakika daha yoğuruyoruz...


cover the bowl with a towel and leave the dough to rise at room temperature
 until almost doubled in volume,about 1 hour...
then deflate the dough and transfer into another bowl,
covered with plastic wrap
  and refrigerate overnight ...


hamur kabını bezle örterek,iki katına kabarana dek (yaklaşık bir saat)
mutfağımızda bekletiyoruz...
sonra elle hamuru söndürüp,diğer bir kaba boşaltarak,
ve üstünü stretch film ile kapatarak
 buzdolabında bir gece bekletiyoruz...



wake up early in the morning to shape these beauties ?!
you will easily shape the dough when it's cold,
but as you work with it,it will get soft and sticky
 with the warmth of the hands...
so work with a part of the dough
 and leave the rest in the fridge while working...
to shape the classic brioche shape,here is the video to watch
place into buttered moulds and leave to rise again...


sabah erkenden kalkıp,bu enfes çörekleri şekillendiriyoruz...
hamur buzdolabından çıktığında kolayca şekillendirilebiliyor,
ancak elimizin ısısı ile gittikçe yumuşayacak
 ve yapışkan hale gelecek...
bu sebeple hamurun bir kısmı ile çalışırken,
diğer yarısını buzdolabında tutun...
klasik brioche şekli için şu video'yu seyredebilirsiniz
yağlanmış kalıplara yerleştirip,tekrar kabarmaları için bekletiyoruz...



don't forget to brush with egg wash and sprinkle some sugar on tops...

yumurta sarısını sulandırarak üstlerine sürmeyi
ve hatta biraz da tozşeker (ya da tarçınlı,vanilyalı şeker)
serpmeyi unutmayalım...


into the oven , preheated to 190 C
and bake for 15-17 minutes


önceden 190 C  ısıtılmış fırında
15-17 dakika pişiriyoruz




kahvelerimiz de hazır!

haydi sofraya...

sabah sabah,adeta bir Fransız ekmek fırınındaymışcasına kokular yayıldı mutfaktan terasa...
