pickled tunny...


 
 
 
another bonito recipe, this time coming from my husband,Ahmet!
 
 
 
yine palamutla yeni tarif, bu sefer Ahmet'ten!

 
 


you won't be able to distinguish between the tastes done with bonito or tunny...

to try,we had a big bonito,
cleaned out of head,entrails and finbones
left with the midbone,and cut into 3 pieces
wellwashed under cold water 
left to rest 3-4 hours in icy cold water in the fridge (changing the water 2 times)
wiped dry,and placed over grid and placed in the fridge covered with stretch film for 24 hours
then well rubbed all over with seasalt (there should be 7-8 mm salt layer)
and into the fridge once again,placed over grid,this time for a week...
(in the third day,we salted them again,applying a new layer over them)
on the seventh day,we cleaned them out of the salty layer,
cleaned them into fillets,discarding the midbone,the skin
sliced them
and ate them...
 
 
to preserve
in a jar covered in sunflower oil,in fridge ...




bu ilk denememiz için bir iri palamut balığı kullandık
kafası,iç kısmı ve yüzgeç kılçıklarını iyice temizleyip,
takoz tabir edilen parçalara (3 parça) böldük
soğuk suda bol yıkadıktan sonra buzlu suda,buzdolabında 3-4 saat beklettik
(iki kere de suyunu değiştirdik)
iyice kuruladık,ve ızgara üstünde (suyu alta akacak!),üstü stretch film ile kapalı olarak
 buzdolabında beklettik,24 saat kadar...
ertesi gün  hertarafını (iç ve dış kısımları) deniztuzu ile kaplayarak
(ki bu da,yaklaşık 7-8 mmlik bir tuz tabakası oluşturdu üstünde)
tekrar aynı şekilde,bir ızgara üstünde,buzdolabında bir hafta beklettik...
biz üçüncü günde,tekrar bir tuzlama işlemi yaptık,
yedinci gün,çıkarttık,tuzlu tabakaları temizledik,
orta kemiği ve derisini temizleyerek filetolar hazırladık,
dilimledik,
veeeee yedik,afiyetle ;)

uzun süreli saklamak için
 ayçiçeği yağı içinde kavanozda,buzdolabına...
