brunching in "Bulgarian" style ...







when I came across this esthetic version of brioche bread,
I immediately thought it should take a seating
 in my bakery selection of the summer brunch buffet...

Brioche Bulgare / Bugarski kruhici

200 ml warm milk
1 tablespoon butter,softened
1 egg + 1 egg white (use the yolk for eggwash)
1 tablespoon sugar
2 teaspoons dry yeast
2 teaspoons salt
500 gm all-purpose flour
mix the sugar and yeast into warm milk and let rest for 10 minutes till frothy...
place the egg and eggwhite in the middle of the flour
add the butter and the milk mix aswell...
start working to form a soft brioche dough...
knead for 5-8 minutes and leave to rest for an hour till double in size
divide the dough into 4 pieces/balls and divide each into 4 pieces again!
while working with one piece,leave the other pieces covered with a kitchen towel
roll each of the four pieces into circles (25 cm)
and layer all four,brushing with butter in between
roll into a log tightly and cut in diagonals...
place them in your cake tin ,lined with parchment paper and let rise for 45 minutes
brush with eggwash and bake in preheated oven,at 200 C  for 15-20 minutes ...
